Antonio Gagliardi

Antonio Gagliardi is Senior Technologist at Barilla and leads the technological and design development of Artisia, the project that introduced 3D-printed pasta into the high gastronomy and private markets. With a background spanning architecture, computational design and technological innovation, his professional journey began in the makers ecosystem, digital fabrication and open innovation, before evolving into the food sector where he combines parametric design, additive manufacturing, product development and digital transformation. For over ten years he has worked at the intersection of food, technology and design, contributing to the creation of new product categories and new models of food experience. At Barilla he focuses on advanced innovation, industrial digitalisation, IoT systems, data analysis and the development of new technologies for pasta and emerging products. Since 2015 he has been one of the key architects behind the development of Artisia, a company that uses computational design and 3D printing to create pasta shapes impossible to produce with traditional technologies. His work explores how digital technologies can amplify creativity, transforming food from a simple product into a cultural, aesthetic and sensory experience. A firm believer in the interdisciplinary approach, he collaborates with universities, startups, research centres and international designers to imagine new scenarios for the future of food.
